Preheat oven to 375F. Parchment line 2 baking sheets.
1 1/4 cups whole wheat flour
1/4 tsp baking soda
1/4 tsp salt
1/2 cup butter, room temperature
1/4 cup peanut butter
3/4 cup lightly packed brown sugar
1 or 1 1/2 packages (104 grams) Reese’s Peanut Butter Cups, roughly chopped
In a medium bowl whisk flour, baking soda and salt together. Set aside.
Cream the butter, peanut butter and brown sugar together until smooth. Add in egg and beat mixture until smooth.
Add in flour mixture and beat on low speed of mixer OR stir in by hand.
Add in chopped peanut butter cups and mix in well.
With floured hands roll the dough into balls and place on prepared sheets about 1 1/2 inches apart. Flatten slightly.
Bake 9-10 minutes or until cookies are light golden brown.
Note: These baked up quickly in about 6 minutes at 375F for me. So definitely check after about 5 minutes, seriously!
